咖哩雜菜
材料:
椰菜花一個
薯仔一個
紅蘿蔔半個
洋蔥1個
粟米一支
青瓜一條
蕃茄2個
印度薄餅2塊
咖哩粉一包
黃薑粉
椰漿400毫升
處理:
1. 椰菜花,切細舊。
2. 薯仔,去皮,切一舊舊。
3. 紅蘿蔔,去皮,切薄片。
4. 洋蔥,去皮,一開四。
5. 粟米,去皮,切細舊。
6. 青瓜,去皮,切薄片。
7. 蕃茄,一開六。
烹調:
1. 大火在鑊內燒熱油3湯匙。
2. 放薯仔落鑊,煎香。
3. 另一邊,大火煲滾清水一升半,加入粟米、椰菜花及紅蘿蔔,出一出水。
4. 椰菜花已滾起,擎乾水,紅蘿蔔及薯仔,擎乾水。
5. 薯仔已煎至金黃色,擎乾油在另一邊鑊,加入洋蔥及青瓜,爆香。
6. 熄火,加入調味料:
a. 咖哩粉一茶匙
b. 黃薑粉半茶匙
c. 糖半湯匙
加入其餘蔬菜,炒勻,加入清水200毫升,大火滾起,再加入咖哩粉半茶匙,炒勻,煮一分鐘。
7. 再試一試味。
8. 加入椰漿150毫升,炒勻。
9. 又試一試味。
10. 加入少許鹽,炒勻。
11. 加入適量生粉芡,炒勻。
12. 加入蕃茄,炒勻。
13. 放上碟。
14. 印度薄餅,放鑊內,慢火煎。
15. 薄餅,一面已煎至金黃色,反轉繼續煎。
16. 薄餅,兩面都已煎好,放上碟。
17. 完成,可享用。
Curry mixed vegetables
Ingredients:
Cauliflower 1 No.
Potato 1 No.
Carrot half No.
Onion 1 No.
Corn 1 No.
Cucumber 1 log
Tomatoes 2 Nos.
Plain parathyroid 2 pcs
Curry powder 1 pack
Tumeric powder
Coconut milk 400ml
Preparation:
1. Cauliflower, cut in pieces.
2. Potato, get it peeled. Cut in pieces.
3. Carrot, get it peeled. Thinly slice.
4. Onion, get it peeled. Divide it into 4 shares.
5. Corn, get it peeled. Cut in small pieces.
6. Cucumber, get it peeled. Thinly slice.
7. Tomatoes, divide each into 6 shares.
Steps:
1. Heat up 3 tbsp of oil at high flame in wok.
2. Put potato in wok. Fry well.
3. On the other side, heat up 1.5L of water at high flame. Add in corn, cauliflower and carrot. Boil for a while.
4. Cauliflower has been boiled up, get it drained. Carrot and potato, get them drained.
5. Potato has been fried into golden yellow, drain the oil in another wok. Add in onion and cucumber, fry well.
6. Turn off fire. Add seasoning:
a. Curry powder 1 tsp
b. Tumeric powder 0.5 tsp
c. Sugar 0.5 tbsp
Add in the remaining vegetables, fry well. Add in 200ml of water, heat up at high flame. And add in 0.5 tsp of curry powder, fry well. Cook for a minute.
7. Check the taste again.
8. Add in 150ml of coconut milk, fry well.
9. Check the taste again.
10. Add in little salt, fry well.
11. Add in appropriate amount of tapioca sauce, fry well.
12. Add in tomatoes, fry well.
13. Put on a plate.
14. Plain parathyroid, put in the wok. Fry at low flame.
15. The plain parathyroid, one side has been fried into golden yellow, flip over and continue frying.
16. The plain parathyroid, both sides have been fried well, put on plate.
17. Complete. Serve.
