香煎鴨胸
材料:
急凍鴨胸2件
蔬菜適量
處理:
1. 鴨胸,預先解凍。
2. 鴨胸,加入少許粗鹽,撈勻,醃一分鐘,去除雪味、腥味,及加入少許鹹味。
3. 鴨胸,清水沖洗乾淨,擎乾水,廚紙索乾。
4. 鴨胸,打橫,輕手𠝹幾刀。
5. 鴨胸,加入少許鹽。
烹調:
1. 白鑊,鴨胸,皮向下,中慢火反轉煎4次,每面一分鐘。
2. 鴨胸,四面已煎熟,皮向下,大火再煎一分鐘。
3. 煎好。
4. 預備一隻碟,放好蔬菜。
5. 鴨胸,切大件,放好在碟上。
6. 完成, 可享用。
