咕嚕雞柳
材料:
急凍無激素雞柳6件
罐頭菠蘿(細)一罐
蕃茄一個
紅甜椒一隻
芹菜適量
乾蔥頭3粒
雞蛋黃一隻
片糖半塊
處理:
1. 雞柳,清水解凍。
2. 雞柳解凍後,倒去水分,加入粗鹽一茶匙,撈勻,醃5分鐘,揸出血水,去除雪味、腥味,及加入少許鹹味。
3. 雞柳,清水沖洗乾淨,擎乾水,廚紙索乾。
4. 雞柳,一開四。
5. 雞柳,加入調味料:
a. 胡椒粉適量
b. 蠔油一茶匙
c. 生粉一茶匙
d. 麪粉一茶匙
撈勻,同時加入蛋黃,撈勻。
6. 紅甜椒,切一塊塊。
7. 芹菜,切段。
8. 乾蔥頭,去皮,切片。
9. 蕃茄,一開六。
10. 菠蘿,一開六。
11. 片糖,切碎。
12. 預備生粉芡。
烹調:
1. 大火在鑊內燒熱油2湯匙。
2. 雞柳,放鑊內,轉中慢火,繼續煎。
3. 另一邊,大火在鑊內燒熱油一茶匙。
4. 乾蔥頭、蕃茄及紅甜椒,放鑊內煎香。
5. 雞柳,一面已煎至金黃色,反轉繼續煎。
6. 在乾蔥頭內,加入茄汁2湯匙及清水50毫升,大火滾起。
7. 雞柳,轉大火,繼續煎。
8. 片糖,加入醬汁內,同時加入菠蘿糖水一湯匙。
9. 在醬汁內,加入生粉芡,煮至稠厚,熄火,攤凍。
10. 雞柳,擎乾油。
11. 在醬汁內,加入芹菜及菠蘿粒。
12. 雞柳,放入醬汁內,撈勻。
13. 完成,上碟,可享用。
Chicken fillet in sweet and sour sauce
Ingredients:
Frozen no hormones chicken fillet 6 Nos.
Canned pineapple (small) 1 can
Tomato 1 No.
Red bell pepper 1 No.
Celery appropriate amount
Shallots 3 Nos.
Egg yolk 1 No.
Slab sugar half pc
Preparation:
1. The fillet, defrost in tap water.
2. The fillet has been defrosted, pour away water. Add in 1 tsp of cooking salt, mix well. Season for 5 minutes. Squeeze the blood, to remove unpleasant smells and add some salty tastes to it.
3. The fillet, rinse thoroughly. Drain. Dry with kitchen towels.
4. The fillet, divide each into 4 shares.
5. The fillet, add seasoning:
a. Pepper appropriate amount
b. Oyster sauce 1 tsp
c. Tapioca starch 1 tsp
d. Rice flour 1 tsp
Mix well. Add in the egg yolk at the same time. Mix well.
6. The pepper, cut in pieces.
7. The celery, cut in lengths.
8. Shallots, get them peeled and sliced.
9. Tomatoes, divide each into 6 shares.
10. Pineapple, divide each into 6 shares.
11. Slab sugar, chop well.
12. Get ready for tapioca sauce.
Steps:
1. Heat up 2 tbsp of oil at high flame in wok.
2. The fillet, put in the wok. Turn to medium-low flame and continue frying.
3. On the other side, heat up 1 tsp of oil at high flame in wok.
4. Shallots, tomatoes and pepper, put in the wok. Fry well.
5. The fillet, one side has been fried into golden yellow, flip over and continue frying.
6. In the shallots, add in 2 tbsp of tomato ketchup and 50ml of tap water. Heat up at high flame.
7. The fillet, turn to high flame and continue frying.
8. The slab sugar, put in the sauce. Add in 1 tbsp of the pineapple syrup at the same time.
9. In the sauce, add in the tapioca sauce until it turns thick. Turn off fire. Wait for cooling down.
10. The fillet, drain the oil.
11. In the sauce, add in celery and pineapple cubes.
12. Chicken fillet, put in the sauce. Mix well.
13. Complete. Put on plate. Serve.
