Blanch and rinse them clean. In a new pot, bring water to a boil, add a little salt, 1 tbsp Shaoxing wine, ginger, and spring onions. Once it boils, reduce to low heat and simmer for 45 minutes. 2️⃣ Remove the pork knuckles and soak them in ice water for 15 minutes. Discard the ice water, then rinse repeatedly until the water runs clear, or rinse under running water for 30 minutes. 3️⃣ Remove the large bones. Add galangal, lemongrass, red chilies, kaffir lime leaves, lime slices and lime juice, Thai basil, 2 tbsp sugar, 3 tbsp fish sauce, 2 tbsp white vinegar, and 1 tbsp light soy sauce. Mix well and marinate in the fridge for at least 4 hours. _______________________________________________ 🇮🇩 Bahasa Indonesia 🟢 Bahan-bahan: Kaki babi – 1 kg Serai – 1 batang Lengkuas – 1 potong Jeruk nipis – 3 buah Daun jeruk – 4 lembar Kemangi Thailand – secukupnya Cabai merah – secukupnya Kecap ikan – 3 sdm Gula – 2 sdm Cuka putih – 2 sdm Kecap asin ringan – 1 sdm Arak Shaoxing, daun bawang, jahe – untuk merebus awal 🟢 Cara Memasak: 1️⃣ Rendam kaki babi dalam air dengan sedikit garam selama 30 menit. Rebus sebentar (blanch) lalu bilas hingga bersih. Didihkan air baru, tambahkan sedikit garam, 1 sdm arak Shaoxing, jahe, dan daun bawang. Setelah mendidih, kecilkan api dan rebus selama 45 menit. 2️⃣ Angkat kaki babi dan rendam dalam air es selama 15 menit. Buang air esnya, lalu bilas berulang kali hingga air bilasan menjadi jernih, atau bilas di bawah air mengalir selama 30 menit. 3️⃣ Buang tulang besarnya. Tambahkan lengkuas, serai, cabai merah, daun jeruk, irisan dan perasan jeruk nipis, kemangi Thailand, 2 sdm gula, 3 sdm kecap ikan, 2 sdm cuka putih, dan 1 sdm kecap asin ringan. Aduk rata dan simpan di lemari es minimal selama 4 jam untuk dimarinasi. _______________________________________________ 🇵🇭 Tagalog / Filipino 🟢 Mga Sangkap: Pork knuckle (pata) – 1 kilo Tanglad (lemongrass) – 1 tangkay Luya-luyahan (galangal) – 1 piraso Dayap o kalamansi – 3 piraso Dahon ng dayap – 4 piraso Thai basil – ayon sa panlasa Pulang sili – ayon sa panlasa Patis (fish sauce) – 3 tbsp Asukal – 2 tbsp Puting suka – 2 tbsp Light soy sauce – 1 tbsp Shaoxing wine, sibuyas dahon, luya – para sa pagpapakulo 🟢 Paraan ng Pagluluto: 1️⃣ Ibabad ang pata sa tubig na may kaunting asin sa loob ng 30 minuto. Pakuluan sandali (blanch) at banlawan hanggang malinis. Magpakulo ng bagong tubig, lagyan ng kaunting asin, 1 tbsp Shaoxing wine, luya, at sibuyas dahon. Kapag kumulo, hinaan ang apoy at pakuluan sa loob ng 45 minuto. 2️⃣ Alisin ang pata at ibabad sa malamig na tubig na may yelo sa loob ng 15 minuto. Itapon ang tubig, banlawan nang paulit-ulit hanggang luminaw ang tubig, o banlawan sa ilalim ng umaagos na tubig sa loob ng 30 minuto. 3️⃣ Alisin ang malalaking buto. Idagdag ang galangal, tanglad, pulang sili, dahon ng dayap, hiwang dayap at katas nito, Thai basil, 2 tbsp asukal, 3 tbsp patis, 2 tbsp puting suka, at 1 tbsp light soy sauce. Haluing mabuti at i-marinate sa refrigerator nang hindi bababa sa 4 na oras. _______________________________________________
