A bright orange cake made with oats, swollen chia seeds, dried fruits, and zest – completely flour-free and sugar-free! Juicy, fragrant, with a crispy crust and sugar-free dark chocolate glaze on top.
Recipe for cooking and ingredients:
For the cake:
• 2 cups rolled oats (200 g / 7 oz) – grind 1 cup into flour, leave 1 cup whole
• Zest of 1 orange
• Juice of 1 orange
• 3 tbsp chia seeds + ½ cup water (120 ml / 4 fl oz) for swelling
• ½ tsp salt
• ¼ cup raisins (40 g / 1.4 oz) – soak 15 min
• ¼ cup dried apricots (40 g / 1.4 oz) – soak 15 min, chop
• ½ cup water (130 ml / 4.4 fl oz)
• 2 tbsp coconut oil
• 3 tbsp sugar-free maple syrup (or stevia to taste)
• 1 tsp baking powder
For the glaze & decoration:
• ⅓ cup sugar-free dark chocolate (50 g / 1.8 oz)
• 2½ tbsp hot milk
• Almond petals (for decoration)
Pan:
• 17 cm (6.7 in) diameter lined with parchment
• 180°C (360°F) — 60 minutes
Instructions
1. Grind 1 cup oats into flour.
2. Soak chia seeds in ½ cup water for 15 minutes.
3. Soak raisins and dried apricots in cold water for 15 minutes, chop apricots.
4. Mix oat flour + whole oats + baking powder.
5. Add orange juice & zest + coconut oil + maple syrup + swollen chia + ½ cup water + salt + dried fruits.
6. Stir until uniform.
7. Pour batter into a 17 cm parchment-lined pan.
8. Bake at 180°C for 60 minutes.
9. Glaze:
o Melt chocolate with hot milk, stir.
o Pour over cooled cake, decorate with almond petals.
10. Serve:
• Decorate the finished cake with chocolate glaze.
• Decorate with almond petals.
Serving & Storage
• Serve fully cooled – the glaze will set and crunch!
• Keeps in the fridge up to 5 days.
Tips
• For extra juiciness, add 1 mashed banana.
• Sprinkle with sesame before baking.
