老抽 – 約1/2湯匙

🟢 做法:
1️⃣ 栗子洗淨後蒸15分鐘,關火後等5分鐘才開蓋。
2️⃣ 雞用粗鹽揉搓,洗淨吸乾水斬件。
3️⃣ 熱鍋下少許油,下雞件煎至兩面金黃,下薑、蒜頭、紅蔥頭爆香,下冬菇、栗子,加入蠔油、紹興酒、生抽、老抽及適量熱水,蓋上鍋蓋,中火炆約5分鐘,試味後加少許鹽,勾一個薄芡,入蔥段炒勻即可上碟。

Cornstarch slurry – as needed

Coarse salt – as needed (for cleaning the chicken)
🟢 Cooking Directions:
1️⃣ Steam the cleaned chestnuts for 15 minutes. Turn off the heat and wait 5 minutes before opening the lid.
2️⃣ Rub the chicken with coarse salt, rinse well, pat dry, and chop into pieces.
3️⃣ Heat a little oil in a wok, pan-fry the chicken pieces until both sides are golden brown. Add ginger, garlic, and shallot, and stir-fry until fragrant. Add shiitake mushrooms and chestnuts, then season with oyster sauce, Shaoxing wine, light soy sauce, dark soy sauce, and some hot water. Cover and braise over medium heat for about 5 minutes. Taste and adjust with a pinch of salt. Thicken slightly with cornstarch slurry, add spring onion, stir well, and serve.

🟢 Cara Memasak:
1️⃣ Kukus biji kastanye yang sudah dibersihkan selama 15 menit. Matikan api dan tunggu 5 menit sebelum membuka tutup kukusan.
2️⃣ Gosok ayam dengan garam kasar, bilas hingga bersih, keringkan, lalu potong-potong.
3️⃣ Panaskan sedikit minyak dalam wajan, goreng ayam hingga kedua sisinya berwarna keemasan. Tambahkan jahe, bawang putih, dan bawang merah, tumis hingga harum. Masukkan jamur shiitake dan kastanye, lalu bumbui dengan saus tiram, arak Shaoxing, kecap asin, kecap manis pekat, dan sedikit air panas. Tutup dan didihkan dengan api sedang selama sekitar 5 menit. Cicipi dan tambahkan sedikit garam jika perlu. Kentalkan sedikit dengan larutan maizena, tambahkan daun bawang, aduk rata, dan sajikan.

🟢 Paraan ng Pagluluto:
1️⃣ I-steam ang mga nilinis na kastanyas sa loob ng 15 minuto. Patayin ang apoy at maghintay ng 5 minuto bago buksan ang takip.
2️⃣ Kusutin ang manok gamit ang magaspang na asin, banlawan nang mabuti, patuyuin, at hiwain sa maliliit na piraso.
3️⃣ Magpainit ng kaunting mantika sa kawali, iprito ang manok hanggang maging gintong kayumanggi ang magkabilang panig. Idagdag ang luya, bawang, at sibuyas, at igisa hanggang maging mabango. Ilagay ang shiitake mushrooms at kastanyas, pagkatapos ay timplahan ng oyster sauce, Shaoxing wine, light soy sauce, dark soy sauce, at kaunting mainit na tubig.
