These soft, chocolatey energy bites made with nuts and dates are incredibly delicious and satisfying. Perfect as a healthy snack or dessert you can enjoy every day—guilt-free! 💛
Recipe for cooking and ingredients:
Base:
• Cashews — 1/3 cup (1.8 oz / 50 g)
• Walnuts — 1/4 cup (1 oz / 30 g)
• Almonds — 2.5 tbsp (0.7 oz / 20 g)
Seeds:
• Sunflower seeds — 3.5 tbsp (1 oz / 30 g)
• Pumpkin seeds — 2.5 tbsp (0.7 oz / 20 g)
Main mixture:
• Dates — 1 cup (5.3 oz / 150 g)
• Peanut butter — 2 tbsp
• Cocoa powder — 2 tbsp
Spices:
• Cinnamon — 1 tsp
• Dried ginger — 1 tsp
• Vanilla — to taste
• Salt — a pinch
Chocolate coating:
• Sugar-free dark chocolate — 1/2 cup (3 oz / 90 g)
• Coconut oil — 1 tsp

👩🍳 Instructions:
Lightly toast the cashews, walnuts, and almonds in a dry pan until fragrant.
Toast the sunflower and pumpkin seeds separately.
Add all nuts and seeds to a blender and pulse into crumbs.
Soak the dates in hot water for 15 minutes, then remove the pits and chop them.
Add the dates to the blender.
Add peanut butter, cocoa powder, cinnamon, ginger, vanilla, and a pinch of salt.
Blend until a sticky, dense mixture forms.
Shape into small bites.
Place in the freezer for 15 minutes.
Melt the dark chocolate with coconut oil (double boiler or microwave).
Dip each bite into the chocolate and decorate with nuts if desired.
Refrigerate for another 15 minutes until set.

🍵 Bonus: Healthy Tea
Add to a teapot:
• 2 tbsp loose-leaf black tea
• 1 slice of lemon
• 2 slices of orange
• 1 tsp dried mint
Pour over hot water and let steep for 5–7 minutes.
