⬇️⬇️English recipe follows⬇️⬇️ 高速煲梅菜炆豬手 材料: 急凍豬手粒4磅 甜梅菜2棵(約半斤) 薑1舊 蒜頭6粒 芫荽2棵 辣椒仔2隻 處理: 1. 大火煲滾1鑊水,加入粗鹽1茶匙及紹興酒1湯匙,烚豬手粒3分鐘至完全解凍,清水沖洗乾淨,擎乾水。 2. 梅菜,逐條撕開,開住水喉,逐條清洗乾淨,沖洗2~3次,揸乾水。 3. 豬手調味: a. 紹興酒2湯匙 b. 生抽1湯匙 c. 老抽半湯匙 d. 蠔油1湯匙 e. 胡椒粉1茶匙 f. 糖1湯匙 g. 生粉1湯匙 撈勻,醃20分鐘以上,最好醃1小時或以上。 4. 梅菜,切粒。 5. 蔥,切粒。 芫荽,切碎。 薑,去皮,切絲。 辣椒仔,去椗,切碎。 蒜頭,去皮,切碎。 烹調: 1...
⬇️⬇️English recipe follows⬇️⬇️ 高速煲梅菜炆豬手 材料: 急凍豬手粒4磅 甜梅菜2棵(約半斤) 薑1舊 蒜頭6粒 芫荽2棵 辣椒仔2隻 處理: 1. 大火煲滾1鑊水,加入粗鹽1茶匙及紹興酒1湯匙,烚豬手粒3分鐘至完全解凍,清水沖洗乾淨,擎乾水。 2. 梅菜,逐條撕開,開住水喉,逐條清洗乾淨,沖洗2~3次,揸乾水。 3. 豬手調味: a. 紹興酒2湯匙 b. 生抽1湯匙 c. 老抽半湯匙 d. 蠔油1湯匙 e. 胡椒粉1茶匙 f. 糖1湯匙 g. 生粉1湯匙 撈勻,醃20分鐘以上,最好醃1小時或以上。 4. 梅菜,切粒。 5. 蔥,切粒。 芫荽,切碎。 薑,去皮,切絲。 辣椒仔,去椗,切碎。 蒜頭,去皮,切碎。 烹調: 1. 梅菜及薑,大火,白鑊烘乾,令它們更出味。 2. 加入糖1湯匙,提升梅菜的味道,炒勻。 3. 加入油半湯匙,同時加入蒜蓉炒勻,放碗內。 4. 預備一隻碗,它的大小以可以放入高速煲為準。放豬手落碗,皮向下,梅菜鋪上面,加入調味料汁(如有),壓實。 5. 在高速煲內加入清水300毫升,整碗豬手放入煲,用“蹄筋”功能,炆40分鐘。 6. 倒出豬手汁在碗,倒入鑊內,大火滾起,加入少許生粉芡,收汁至稠厚,熄火。 7. 整碗豬手,倒轉放碟上,淋上芡汁,灑上蔥粒及辣椒粒。 8. 完成,可享用。 Braised pork knuckle with mustards with high speed cooker Ingredients: Frozen pork knuckle cubes 4 lb Sweet mustards 2 Nos. (About 0.5 catty) Ginger 1 No. Garlics 6 Nos. Coriander 2 Nos. Chili 2 Nos. Preparation: 1. Heat up a wok of water at high flame. Add in 1 tsp of cooking salt and 1 tbsp of Shaoxing wine, boil the knuckles until totally defrosted. Rinse thoroughly. Drain. 2. The mustards, tear it out slice by slice. Rinse them one by one under running tap. Rinse 2~3 times. Squeeze them. 3. Season the knuckles: a. Shaoxing wine 2 tbsp b. Light soya sauce 1 tbsp c. Dark soya sauce 0.5 tbsp d. Oyster sauce 1 tbsp e. Pepper 1 tsp f. Sugar 1 tbsp g. Tapioca starch 1 tbsp Mix well. Season for 20 minutes or more. Season for more than an hour will be the best. 4. The mustard, dice in cubes. 5. Green onion, dice in cubes. Coriander, chop well. Ginger, get it peeled and shredded. Chili, cut its anchor. Chop well. Garlics, get them peeled. Chop well. Steps: 1. The mustards and ginger, high flame, plain wok, no oil, heat them up until totally dried up to enhance flavour. 2. Add in 1 tbsp of sugar to enrich the taste of mustards. Fry well. 3. Add in 0.5 tbsp of oil and garlics at the same time. Fry well. Put in a bowl. 4. Get ready for a bowl. The size is to be fitted in high speed cooker. Put the knuckles in the bowl. Skin faces down. Put mustards on top. Add in seasoning sauce (if any). Press well. 5. Fill 300ml of water in the high speed cooker. Put knuckles in it. Use "tendons" function, braise for 40 minutes. 6. Pour out the knuckles sauce in a bowl. Pour it into wok. Heat up at high flame. Add in little tapioca sauce to make the sauce thick. Turn off fire. 7. Put a plate on top of the knuckles. Put them on the plate. Pour the sauce on the knuckles. Put green onion and chili cubes on top. 8. Complete.
