太極鴛鴦飯
材料:
白飯(凍)2碗
瘦肉200克
雞蛋3隻
蕃茄4個
急凍蝦仁10隻
鮮奶250毫升
芝士2塊
處理:
1. 蝦仁,清水解凍。
2. 蝦仁已解凍,倒去水分,加入粗鹽一茶匙,撈勻,去除雪味、腥味,及加入少許鹹味。
3. 瘦肉,洗乾淨,擎乾水。
4. 蕃茄,去椗,洗乾淨,一開八。
5. 蝦仁,清水洗乾淨,擎乾水。
6. 瘦肉,切片。
7. 瘦肉調味:
a. 生粉半茶匙
b. 油半茶匙
c. 鮑魚汁一茶匙
d. 胡椒粉適量
e. 糖半茶匙
f. 生抽半茶匙
撈勻。
8. 蝦仁已擎乾水,廚紙索乾。
9. 蝦仁,加入調味料:
a. 生粉半茶匙
b. 胡椒粉適量
撈勻。

1. 大火在鑊中燒熱油一茶匙。
2. 加入蝦仁,煎至金黃色,熄火,擎乾油,放碗內。
3. 大火在鑊中燒熱油一茶匙。
4. 雞蛋,打勻,倒入鑊內,同時加入白飯,炒勻,加入鹽半茶匙,炒勻至乾身,放碗內,用碟蓋好。
5. 大火在鑊中燒熱油一茶匙。
6. 蕃茄,爆香,加入:
a. 清水100毫升
b. 糖2茶匙
c. 鹽少許
大火煮2分鐘至軟身。
7. 加入肉片,炒勻,燜5分鐘。
8. 加入茄汁一湯匙,炒勻,放碗內,用碗蓋好。
9. 鮮奶,倒入鑊內,加入芝士,加入:
a. 糖半茶匙
b. 鹽適量
慢火煮滾。
10. 預備生粉芡。
11. 生粉芡,逐少逐少加入鮮奶內,攪勻,煮至少許稠厚,熄火,倒入碗內,用碗蓋好。
12. 炒飯,放好在碟上。
13. 蕃茄汁,蓋在飯面的一半位置。
14. 白汁,蓋在飯面, 蕃茄汁的另一邊。
15. 蝦仁,鋪在白色的上面。
16. 完成,可享用。
Tai Chi yin yang fried rice
Ingredients:
Rice (cold) 2 bowls
Lean meat 200g
Eggs 3 Nos.
Tomatoes 4 Nos.
Frozen shrimps 10 Nos.
Fresh milk 250ml
Cheese 2 slices
Preparation:
1. Shrimps, defrost in tap water.
2. Shrimps have been defrosted, pour away water. Add in 1 tsp of cooking salt, mix well, to remove unpleasant smells and add some salty tastes to them.
3. The pork, rinse with tap water. Drain.
4. Tomatoes, remove stalks. Rinse with tap water. Divide each into 8 shares.
5. Shrimps, rinse with tap water. Drain.
6. The pork, get it sliced.
7. Season the pork:
a. Tapioca starch 0.5 tbsp
b. Oil 0.5 tsp
c. Abalone sauce 1 tsp
d. Pepper appropriate amount
e. Sugar 0.5 tsp
f. Light soya sauce 0.5 tsp
Mix well.
8. Shrimps have been drained, dry with kitchen towels.
9. Shrimps, add seasoning:
a. Tapioca starch 0.5 tsp
b. Pepper appropriate amount
Mix well.
Steps:
1. Heat up 1 tsp of oil at high flame in wok.
2. Add in shrimps, fry well until they turn into colour of golden yellow. Turn off fire. Drain the oil. Put in a bowl.
3. Heat up 1 tsp of oil at high flame in wok.
4. Eggs, get them whisked. Pour into the wok. Add in the rice at the same time. Fry well. Add in 0.5 tsp of salt. Fry well until the rice is dry enough. Put in a bowl. Cover it up with a plate.
5. Heat up 1 tsp of oil at high flame in wok.
6. Tomatoes, fry well. Add in:
a. Water 100ml
b. Sugar 2 tsp
c. Salt little
Cook for 2 minutes until they are soft.
7. Add in the pork, fry well. Braise for 5 minutes.
8. Add in 1 tbsp of tomato ketchup, fry well. Put in a bowl. Cover it up with a bowl.
9. Fresh milk, pour in the wok. Add in cheese. Add in:
a. Sugar 0.5 tsp
b. Salt appropriate amount
Boil up at low flame.
10. Prepare tapioca sauce.
11. Tapioca sauce, add in fresh milk little by little. Mix well. Cook until it turns thick. Turn off fire. Pour into a bowl. Cover it up with a bowl.
12. Fried rice, put in good shape on a plate.
13. Tomato sauce, put on top of rice with half area.
14. White sauce, put on top of rice on the other side of the tomato sauce.
15. Shrimps, put on top of the white sauce.
16. Complete.
