Today I’m making my favorite everyday cake — an oat cake with Greek yogurt, banana, and apple. No sugar, no flour, but incredibly tasty and healthy!
It’s moist, fragrant, full of natural fruit sweetness, dried fruits, and crunchy nuts. This is the perfect breakfast or healthy snack that gives you energy for the whole morning.
Recipe for cooking and ingredients:
• Rolled oats — 1 cup (3.5 oz / 100 g)
• Eggs — 2
• Greek yogurt — ¼ cup (1.8 oz / 50 g)
• Milk (oat or cow’s milk) — ½ cup (3.4 fl oz / 100 ml)
• Bananas — 2 small or 1 large
• Apple — 1
• Prunes — ⅓ cup (2 oz / 50 g)
• Raisins — 1½ tbsp (0.7 oz / 20 g)
• Dried cranberries — 1½ tbsp (0.7 oz / 20 g)
• Walnuts — ⅙ cup (0.7 oz / 20 g)
• Almonds — ⅙ cup (0.7 oz / 20 g)
• Coconut oil — 1 tbsp
• Ground cinnamon — ½ tsp
• Ground nutmeg — ¼ tsp
• Zest of 1 lemon
• Vanilla extract — to taste
• Baking powder — 2 tsp
• Salt — a pinch
For topping:
• Agave syrup or honey — for brushing
• Dried cranberries
• Walnut halves
Instructions:
1. Whisk 2 eggs, add ¼ cup Greek yogurt (50 g) and ½ cup milk (100 ml). Mix well.
2. Add 1 cup rolled oats (100 g) and stir.
3. Mash the banana(s) with a fork and add to the mixture.
4. Core and chop the apple into small pieces.
5. Soak prunes, raisins, and cranberries in water for 15 minutes, then drain.
6. Heat 1 tbsp coconut oil in a pan and sauté the apple with the dried fruits for 5 minutes. Add cinnamon, nutmeg, and a pinch of salt.
7. Toast walnuts and almonds, then roughly chop them.
8. Combine all ingredients with the oat mixture. Add lemon zest and vanilla. Finally, add 2 tsp baking powder and mix thoroughly.
9. Grease the baking pan with oil, line with parchment paper, and pour in the batter. Decorate with dried cranberries and walnut halves, gently pressing them into the batter.
10. Bake in a preheated oven at 350°F (180°C) for 40–45 minutes.
11. Let the cake cool completely.
Bonus Aromatic Tea: Add apple pieces, 2 orange slices, 1 cinnamon stick, 6 cardamom pods, and 2 tbsp black loose-leaf tea to a teapot. Pour over boiling water and steep for 4–6 minutes.
Serving & Storage Perfect for breakfast or a healthy snack. Store in the refrigerator for up to 5 days.
