A festive apple cake made with oat flour, cinnamon, vanilla, and dried fruits — zero sugar, zero flour, zero glucose spikes! Tender texture, Christmas aroma, and natural apple sweetness.
Recipe for cooking and ingredients:
For the cake:
• 2 small apples (peeled, finely diced)
• 2 eggs
• 3 tbsp milk
• 2 tbsp yogurt
• 1 tbsp stevia (or any 1:1 sugar substitute)
• Pinch of vanilla powder
• ½ tsp cinnamon
• 60 g (10 tbsp / ½ cup / 2 oz) rolled oats → grind into flour
• 1 tsp baking soda + 1 tbsp 9% vinegar (to neutralize)
• 40 g (¼ cup / 1.4 oz) dried cranberries (soak 15 min)
• 20 g (⅕ cup / 0.7 oz) raisins (soak 15 min)
• Walnuts (for topping)
• A few extra cranberries (for garnish)
For the oolong tea:
• 2 tbsp oolong tea
• 1 tsp dried orange peel
• 4 small slices fresh ginger
• Boiling water (steep 4 min)
Baking:
• 16×11 cm (6×4 in) pan → greased with olive oil + parchment on bottom
• 180°C (360°F) — 35 minutes
Instructions
1. Apple base:
o Peel and finely dice 2 small apples.
2. Wet mix:
o Whisk 2 eggs + 3 tbsp milk + 2 tbsp yogurt + 1 tbsp stevia.
o Add vanilla + ½ tsp cinnamon.
3. Dry mix:
o Grind 60 g oats into flour.
o Extinguish 1 tsp baking soda with 1 tbsp vinegar.
o Combine oat flour + extinguished soda with wet mix.
4. Assembly:
o Pour batter over apples and mix.
o Add drained dried fruits (reserve some cranberries).
o Transfer to greased pan with parchment.
o Decorate with walnuts and reserved cranberries.
5. Bake:
o 180°C (360°F) — 35 minutes (toothpick clean).
6. Oolong tea:
o Add oolong + orange peel + ginger to teapot.
o Pour boiling water, steep 4 minutes.
7. Serve:
o Our diabetic-friendly cake is ready!
o Incredibly delicious, perfectly sweet, and fragrant!
