Today we’re making an incredibly tasty and healthy marble cake! A chocolate oat-banana base pairs with a creamy cottage cheese-yogurt layer studded with dried fruits.
Recipe for cooking and ingredients:
For the Chocolate Base:
• 100 g (1 cup / 3.5 oz) rolled oats (ground in a coffee grinder)
• 4 tbsp cocoa powder
• 1 tsp baking powder
• 160 ml (¾ cup / 5.4 fl oz) milk
• 2 small or 1 large ripe banana (sliced)
• 2 eggs
• Pinch of salt
• Sweetener to taste
• 1 tbsp coconut oil
• Zest of 1 mandarin
For the Cottage Cheese Layer:
• 250 g (2 cups / 5.3 oz) cottage cheese (or ricotta)
• 3 tbsp yogurt
• Maple syrup to taste
• 1 egg
• 2 tbsp dried cranberries
• 2 tbsp raisins (soaked in water for 15 minutes)
For the Tea:
• 1 tsp mint
• 1 tsp thyme
• 1.5 tbsp hibiscus tea
• Boiling water (steep for 4–5 minutes)
Baking:
• Silicone mold greased with vegetable oil
• 180°C (360°F) — 50 minutes
Serving and Storage
• Serve chilled — with tea or as a healthy dessert.
• Store in the refrigerator for up to 4 days
