Today we’re making a delicious and healthy carrot oat cake with lemon — no sugar and no white flour!
Soft texture, natural sweetness, warm spices, and a fresh citrus note — this cake is perfect for breakfast, snack, or a guilt-free dessert 💛
Recipe for cooking and ingredients:
Dry ingredients:
• Oats — 1 1/2 cups (5.6 oz / 160 g)
• Dried ginger — 1/2 tsp
• Cinnamon — 1 tsp
• Nutmeg — 1/4 tsp
• Baking powder — 2 tsp
• Salt — a pinch
Nuts:
• Walnuts — 1/3 cup (1 oz / 30 g)
• Almonds — 1/3 cup (1 oz / 30 g)
Wet ingredients:
• Eggs — 2
• Agave syrup or honey — 2/3 cup (2.4 fl oz / 70 ml)
• Vegetable oil — 2/3 cup (2.4 fl oz / 70 ml)
Add-ins:
• Carrots — 2 medium (5 oz / 150 g)
• Greek yogurt — 2 tbsp
• Zest of 1/2 lemon

🍰 Cream:
• Cream cheese or ricotta — (5.3 oz / 150 g)
• Greek yogurt — 2 tbsp
• Lemon juice — 1 tbsp
• Agave syrup or honey — 1 tbsp
• Vanilla — to taste

👩🍳 Instructions:
Blend the oats into a fine flour.
Add dried ginger, cinnamon, nutmeg, baking powder, and salt. Mix well.
Lightly toast the walnuts and almonds, chop them, and add to the dry mixture.
In a separate bowl, beat the eggs. Add agave syrup (or honey) and vegetable oil, then mix again.
Combine wet and dry ingredients.
Grate the carrots and add them to the batter along with Greek yogurt and lemon zest. Mix until combined.
Transfer the batter to a parchment-lined pan and smooth the top.
Bake at 350°F (180°C) for 50–55 minutes.
Let the cake cool completely.

🍋 Cream:
Mix cream cheese (or ricotta), Greek yogurt, lemon juice, agave syrup, and vanilla until smooth and light.
Spread the cream over the cooled cake.
Decorate with sliced almonds if desired.
Refrigerate for 30 minutes before serving.

Store in the refrigerator for up to 4–5 days.
