茄瓜腐乳蒸雞翼
材料:
急凍雞翼12隻
茄瓜2條
腐乳4磚
薑1小舊
芫荽1棵
腐乳4磚
辣椒仔1隻
處理:
1. 雞翼,清水解凍。
2. 雞翼解凍後,倒去水分,加入粗鹽1茶匙乸5分鐘去除雪味、腥味及加入少許鹹味。
3. 腐乳,加入:
a. 生粉1湯匙
b. 糖半湯匙
c. 胡椒粉少許
撈勻。
4. 雞翼,清水洗乾淨,廚紙索乾,放入處理(3),撈勻。
5. 茄瓜、芫荽及辣椒仔,清水洗乾淨。
6. 芫荽,切細粒。
辣椒仔,切細粒。
7. 茄瓜,切1吋1舊,放碟上,在茄瓜上放上雞翼。
烹調:
1. 大火煲滾1鑊水。
2. 大火蒸雞翼15分鐘。
3. 蒸好,灑上芫荽及辣椒粒。
4. 完成,可享用。
Steam chicken wings with eggplant and fermented beancurd
Ingredients:
Frozen chicken wings 12 Nos.
Eggplant 2 Nos.
Fermented beancurd 4 cubes
Ginger (small) 1 No.
Coriander 1 No.
Chili 1 No.
Preparation:
1. Chicken wings, defrost in tap water.
2. Pour away water after defrost. Season the wings with 1 tsp of cooking salt to remove unpleasant smells and add some salty tastes to them.
3. Fermented beancurd, add in:
a. Tapioca starch 1 tbsp
b. Sugar 0.5 tbsp
c. Pepper little
Mix well.
4. Chicken wings, rinse thoroughly. Dry with kitchen towels. Put in preparation (3). Mix well.
5. Eggplant, coriander and chili, rinse thoroughly.
6. Coriander, dice in small cubes.
Chili, dice in small cubes.
7. Eggplant, cut 1" per each cube. Put on plate. Put chicken wings on top.
Steps:
1. Heat up a wok of water at high flame.
2. Steam the wings at high flame for 15 minutes.
3. Steam well. Put coriander and chili cubes on top.
4. Complete. Serve.
