A fluffy rye pie with dried apricots, raisins, and walnuts – completely sugar-free and wheat-free! Natural sweetness from dried fruits, vanilla aroma, and crunchy nuts on top.
Recipe for cooking and ingredients:
For the pie:
• ½ cup dried apricots (100 g / 3.5 oz) – soak 15 min, chop
• ⅓ cup raisins (50 g / 1.8 oz) – soak 15 min
• 9/10 cup rye flour (140 g / 4.9 oz)
• 1 tsp baking powder
• 2 eggs
• 200 ml yogurt or sour cream
• ⅛ cup coconut oil (25 g / 0.9 oz)
• Pinch of salt
• A little vanilla powder/extract
• 1½ tbsp stevia
• ¼ cup walnuts (50 g / 1.8 oz) – chop, half for batter, half for topping
Pan:
• 16×11 cm → greased with olive oil + parchment on the bottom
• 170°C (340°F) — 40 minutes (recipe mentions 170°C for tenderness)
Instructions
1. Soak dried apricots and raisins in cold water for 15 minutes, chop apricots.
2. Sift rye flour + baking powder.
3. Whisk eggs + stevia + yogurt + coconut oil + salt + vanilla.
4. Combine wet and dry mixtures.
5. Add chopped dried apricots + raisins + half the chopped walnuts.
6. Pour batter into the pan.
7. Top with pieces of dried apricots and remaining walnuts.
8. Bake at 170–180°C for 40 minutes (toothpick clean).
9. Serve:
o This pie is moderately sweet, healthy, fluffy, and very delicious!
o Enjoy your meal!

• Serve fully cooled – texture will be perfect!
• Keeps in the fridge up to 5 days.
Diabetic tips
• Rye flour + moderate dried fruits = stable blood sugar.
• Net carbs per slice ≈ 12–14 g.
