蛋白 – 1隻(醃魚片用)
澱粉 – 1湯匙
糖 – 1/2茶匙

🟢做法:
1️⃣ 芫荽切去頭部,略為沖洗,加了粗鹽浸泡10分鐘,洗淨切段備用。
2️⃣ 鯇魚柳洗淨吸乾水,切薄片或切雙飛,加入薑、蛋白、1/2茶匙鹽、1/2茶匙糖、少許胡椒粉、1湯匙澱粉及少許油拌勻,醃5分鐘。
3️⃣ 皮蛋切碎,熱鍋加少許油,爆炒切碎的皮蛋,加入1塊薑,倒入適量熱水,加入芫荽,再次滾起後加入魚片煮約1分鐘,加入適量鹽調味出鍋。

🟢 Ingredients:
Grass carp fillet – 250g
Coriander – 150g
Ginger – 1 piece
Egg white – 1 (for marinating the fish)
Cornstarch – 1 tbsp
Sugar – 1/2 tsp
White pepper – a pinch
Salt – to taste
Oil – as needed
🟢 Cooking Directions:
1️⃣ Trim off the roots of the coriander and rinse lightly. Soak it in water with coarse salt for 10 minutes, then wash thoroughly and cut into sections.
2️⃣ Rinse and pat dry the grass carp fillet. Slice it thinly or butterfly cut. Add ginger, egg white, 1/2 tsp salt, 1/2 tsp sugar, a pinch of white pepper, 1 tbsp cornstarch, and a little oil. Mix well and marinate for 5 minutes.
3️⃣ Finely chop the century eggs. Heat a pan with a little oil and stir-fry the chopped century eggs. Add 1 piece of ginger, pour in hot water, add the coriander, and once it boils again, add the fish slices and cook for about 1 minute. Season with salt to taste and serve.

Fillet ikan grass carp – 250g

Putih telur – 1 (untuk memarinasi ikan)
Tepung maizena – 1 sdm
Gula – 1/2 sdt
Lada putih – sedikit
Garam – secukupnya
Minyak – secukupnya
🟢 Cara Memasak:
1️⃣ Potong bagian akar daun ketumbar dan bilas cepat. Rendam dalam air yang dicampur garam kasar selama 10 menit, lalu cuci bersih dan potong-potong.
2️⃣ Cuci bersih dan keringkan fillet ikan grass carp. Iris tipis atau iris dengan teknik butterfly cut. Tambahkan jahe, putih telur, 1/2 sdt garam, 1/2 sdt gula, sedikit lada putih, 1 sdm tepung maizena, dan sedikit minyak. Aduk rata dan marinasi selama 5 menit.
3️⃣ Cincang halus telur pitan (century egg). Panaskan sedikit minyak di wajan dan tumis telur pitan cincang. Tambahkan 1 potong jahe, tuangkan air panas, masukkan daun ketumbar, dan setelah kembali mendidih, tambahkan irisan ikan dan masak sekitar 1 menit. Bumbui dengan garam sesuai selera dan sajikan.

🟢 Paraan ng Pagluluto:
1️⃣ Putulin ang ugat ng wansoy at bahagyang banlawan. Ibabad sa tubig na may coarse salt sa loob ng 10 minuto, pagkatapos ay hugasan nang mabuti at hiwain.
2️⃣ Banlawan at patuyuin ang grass carp fillet. Hiwain nang manipis o i-butterfly cut. Idagdag ang luya, putî ng itlog, 1/2 tsp asin, 1/2 tsp asukal, kaunting white pepper, 1 tbsp cornstarch, at kaunting mantika. Haluing mabuti at i-marinate ng 5 minuto.
3️⃣ Tadtarin nang pino ang century eggs. Magpainit ng kaunting mantika sa kawali at igisa ang tinadtad na century eggs. Idagdag ang 1 piraso ng luya, buhusan ng mainit na tubig, ilagay ang wansoy, at kapag kumulo muli ay idagdag ang hiwa ng isda at lutuin ng mga 1 minuto. Timplahan ng asin ayon sa panlasa at ihain.
