Hi everyone! Today we’re making healthy festive cookies!
Crispy, fragrant sunflower-seed & oat cookies dipped in glossy sugar-free dark chocolate — just 5 minutes of work + baking! Subtle coconut flavor, gentle stevia sweetness, and pure holiday magic. Perfect for the Christmas table or as a gift. Paired with a warming spiced oolong tea with cinnamon, ginger, and cloves. Prepare with love and enjoy guilt-free! 🌿✨
Recipe for cooking and ingredients:
For the cookies:
• 1 egg
• Pinch of salt
• 1½ tbsp stevia (or any 1:1 sugar substitute)
• 2 tbsp melted coconut oil + 1 tbsp for the chocolate
• 35 g (5 tbsp) rolled oats → grind into flour
• 200 g (1⅓ cups / 7 oz) raw sunflower seeds
For the chocolate coating:
• 100 g sugar-free dark chocolate (≥85 %)
• 1 tbsp coconut oil
For the spiced oolong tea:
• 1 cinnamon stick
• A few dried plum slices
• 1 slice of lemon
• 1 tbsp oolong or green tea
• ½ tsp dried ginger
• 5 whole cloves
• Boiling water (steep 4–6 minutes)
Baking:
• Baking sheet with parchment
• 6 cm (2.36 in) cookie cutter (or shape with a spoon)
• 180°C (360°F) — 20–25 minutes
Instructions
1. Dough in 2 minutes:
o Whisk egg + salt + 1½ tbsp stevia.
o Pour in 2 tbsp melted coconut oil.
o Add oat flour and sunflower seeds. Mix quickly into a slightly sticky dough.
2. Shape:
o Place parchment on a baking sheet.
o Use a 6 cm cutter (or spoon) to form cookies, pressing lightly.
3. Bake:
o 180°C (360°F) — 20–25 minutes until edges are golden.
4. Chocolate coating:
o Melt 100 g sugar-free dark chocolate + 1 tbsp coconut oil over a water bath.
o Dip cooled cookies halfway or fully.
o Place back on parchment and chill 20–30 minutes until set.
5. Spiced oolong:
o Add cinnamon stick + dried plum + lemon + tea + ginger + cloves to a teapot.
o Pour boiling water and steep 4–6 minutes.
6. Serve:
o Your holiday cookies are ready!

Tips
