Add 1 tbsp oyster sauce, 1 tsp sugar, 1 tsp dark soy sauce, a little white pepper, and gradually add the starch slurry in small amounts. Once the water is boiling, place the plate into the steamer and steam on high heat for 8 minutes. Sprinkle with spring onions, then drizzle hot oil and seafood soy sauce. ________________________________________________________________________________________________________ 🇮🇩 Bahasa Indonesia 🟢 Bahan-bahan: Daging sapi – 300g Bengkuang air (water chestnuts) – 2 buah Kulit jeruk kering – 2g Daun jeruk purut – 1 lembar Saus tiram – 1 sdm Pati/tepung kanji – 1 sdm Kecap hitam – 1 sdt Gula – 1 sdt Lada putih – sedikit Minyak – sedikit Kecap seafood (kecap untuk ikan kukus) – secukupnya 🟢 Cara Memasak: 1️⃣ Rendam kulit jeruk kering hingga lunak, buang bagian dalamnya lalu cincang halus. Kupas dan cuci bengkuang air, kemudian cincang halus. Lepaskan tulang daun tebal di tengah daun jeruk purut lalu cincang daun tersebut. 2️⃣ Cuci daging sapi dan keringkan, potong kecil kemudian cincang halus. Masukkan bengkuang air cincang, daun jeruk purut, dan kulit jeruk ke dalam daging sapi. Tambahkan 1 sdm saus tiram, 1 sdt gula, 1 sdt kecap hitam, sedikit lada putih, dan masukkan larutan pati sedikit demi sedikit. Tambahkan sedikit minyak, aduk rata, dan marinasi selama 30 menit. 3️⃣ Ratakan daging sapi tipis dan merata di atas piring. Setelah air mendidih, masukkan piring ke dalam kukusan dan kukus dengan api besar selama 8 menit. Taburi daun bawang, lalu siram dengan minyak panas dan kecap seafood. ________________________________________________________________________________________________________ 🇵🇭 Tagalog / Filipino 🟢 Mga Sangkap: Baka – 300g Water chestnuts – 2 piraso Pinatuyong balat ng dalandan (tangerine peel) – 2g Dahon ng kaffir lime – 1 piraso Oyster sauce – 1 tbsp Almirol (starch) – 1 tbsp Dark soy sauce – 1 tsp Asukal – 1 tsp Puting paminta – kaunti Mantika – kaunti Seafood soy sauce (steamed fish soy sauce) – tamang dami 🟢 Paraan ng Pagluluto: 1️⃣ Ibabad ang pinatuyong balat ng dalandan hanggang lumambot, alisin ang puti sa loob at tadtarin nang pino. Balatan at hugasan ang water chestnuts, pagkatapos ay tadtarin nang pino. Alisin ang makapal na litid sa gitna ng dahon ng kaffir lime at tadtarin ang dahon. 2️⃣ Hugasan ang baka at patuyuin, hiwain nang maliliit at tadtarin nang pino. Idagdag ang tinadtad na water chestnuts, dahon ng kaffir lime, at balat ng dalandan sa baka. Idagdag ang 1 tbsp oyster sauce, 1 tsp asukal, 1 tsp dark soy sauce, kaunting puting paminta, at idagdag nang paunti-unti ang starch slurry. Magdagdag ng kaunting mantika, haluin nang mabuti, at i-marinate nang 30 minuto. 3️⃣ Ikalat ang pinaghalong baka nang pantay at manipis sa isang plato. Kapag kumukulo na ang tubig, ilagay ang plato sa steamer at i-steam sa malakas na apoy sa loob ng 8 minuto.
