🟢 材料:
蒜芯 – 400克
絞碎豬肉 – 300克
紅辣椒(1隻)– 20克
蒜頭 – 3粒
薑 – 1小塊
豆瓣醬 – 1湯匙
紹興酒 – 1湯匙
蠔油 – 1湯匙
生抽 – 1茶匙
老抽 – 1茶匙
糖 – ½茶匙
鹽 – ¼茶匙
胡椒粉 – 少許
澱粉水 – 適量
油 – 適量
🟢 做法:
1️⃣ 蒜芯切掉頭部較老的部分,摘掉花蕾,切成約2公分的小段,用少許鹽醃10分鐘,醃完沖洗乾淨,瀝乾備用。
2️⃣ 絞碎豬肉放入碗中,加入薑片、1湯匙蠔油、¼茶匙鹽、½茶匙糖、1茶匙生抽、1茶匙老抽、少許胡椒粉,分次加入少許澱粉水拌勻,加少許油封鎖肉汁,醃30分鐘。
3️⃣ 熱鍋下油,把醃好的豬肉炒香, 盛出備用。
4️⃣ 熱鍋下油,爆香蒜頭、薑片和紅辣椒,下蒜芯翻炒,下1湯匙豆瓣醬翻炒均勻,加1湯匙紹興酒及少許水,蓋鍋蓋煮1分鐘,把之前炒好的豬肉回鍋翻炒,勾薄芡翻炒均勻出鍋。

🟢 Cooking Directions:
1️⃣ Cut off the tougher top part of the garlic shoots, remove the flower buds, cut into sections about 2 cm long, marinate with a little salt for 10 minutes, rinse and drain.
2️⃣ Place minced pork in a bowl, add ginger slices, 1 tbsp oyster sauce, ¼ tsp salt, ½ tsp sugar, 1 tsp light soy sauce, 1 tsp dark soy sauce, a pinch of white pepper, gradually mix in some starch slurry, add a little oil to lock in the juices, marinate for 30 minutes.
3️⃣ Heat oil in a pan and stir-fry the marinated pork until fragrant, then remove and set aside.
4️⃣ Heat oil again, sauté garlic, ginger slices and red chili until fragrant, add garlic shoots and stir-fry, then add 1 tbsp doubanjiang and stir evenly, pour in 1 tbsp Shaoxing wine and a little water, cover and cook for 1 minute, return the previously fried pork to the pan, stir-fry while coating with a light starch slurry and serve.

🟢 Cara Memasak:
1️⃣ Potong bagian atas tunas bawang putih yang keras, buang bunga, potong menjadi bagian sekitar 2 cm, rendam dengan sedikit garam selama 10 menit, bilas dan tiriskan.
2️⃣ Masukkan daging babi cincang ke dalam mangkuk, tambahkan irisan jahe, 1 sdm saus tiram, ¼ sdt garam, ½ sdt gula, 1 sdt kecap asin ringan, 1 sdt kecap asin gelap, sejumput lada putih, campurkan larutan pati sedikit demi sedikit, tambahkan sedikit minyak untuk mengunci jus, rendam selama 30 menit.
3️⃣ Panaskan minyak di wajan dan tumis daging babi yang sudah dimarinasi hingga harum, kemudian angkat dan sisihkan.
4️⃣ Panaskan minyak lagi, tumis bawang putih, irisan jahe, dan cabai merah hingga harum, tambahkan tunas bawang putih dan aduk rata, kemudian tambahkan 1 sdm doubanjiang dan aduk merata, tuangkan 1 sdm anggur Shaoxing dan sedikit air, tutup dan masak selama 1 menit, masukkan kembali daging babi yang sudah ditumis sebelumnya, aduk sambil melapisi dengan larutan pati ringan dan sajikan.

🟢 Paraan ng Pagluluto:

2️⃣ Ilagay ang giniling na baboy sa isang mangkok, idagdag ang hiwa ng luya, 1 tbsp sawsawan ng talaba, ¼ tsp asin, ½ tsp asukal, 1 tsp light soy sauce, 1 tsp dark soy sauce, isang kurot ng white pepper, dahan-dahang ihalo ang starch slurry, magdagdag ng kaunting langis upang i-lock ang katas, i-marinate ng 30 minuto.
3️⃣ Painitin ang langis sa kawali at igisa ang marinated na baboy hanggang sa maging mabango, pagkatapos ay alisin at itabi.
