Hi everyone! Today we’re making a healthy, festive apple pie!
Light, airy apple pie made with oat flour and zero sugar — only the natural sweetness of apples and stevia. Fluffy sponge-like texture with juicy apple pieces and a delicate vanilla aroma (add cinnamon if you like). Simple to make, devoured instantly! Perfect for diabetics and anyone watching their blood sugar. Prepare with love and enjoy guilt-free!
Recipe for cooking and ingredients:
For the pie:
• 100 g (1 cup / 3.5 oz) rolled oats → grind into flour
• 3 eggs (separate whites from yolks)
• 2 tbsp stevia (or any 1:1 sugar substitute)
• Pinch of salt
• 1 tsp baking powder
• ½ tsp vanilla powder (or extract)
• 3 medium apples (peeled, cored, sliced into wedges) – reserve a few slices for decoration
Pan:
• 16 cm (6.3 in) round pan lined with parchment
Baking:
• 180°C (360°F) — 50–55 minutes
Instructions
1. Oat flour:
o Grind 100 g oats in a coffee grinder and sift.
2. Whites:
o Beat egg whites with a pinch of salt to soft peaks.
o Add 1 tbsp stevia and beat to stiff peaks.
3. Yolks:
o Beat yolks with the remaining 1 tbsp stevia until pale and fluffy.
o Fold in sifted oat flour + baking powder + vanilla.
4. Combine:
o Gently fold the whipped whites into the yolk mixture in 3–4 additions using a spatula (bottom-to-top motion).
5. Apples:
o Peel, core, and slice 3 apples into wedges.
o Stir most of the apples into the batter; keep a few pretty slices for the top.
6. Bake:
o Pour batter into a 16 cm parchment-lined pan.
o Decorate with reserved apple slices.
o Bake at 180°C (360°F) for 50–55 minutes until golden and a toothpick comes out clean.
7. Serve:
o Let cool slightly in the pan.
o You’ve got an incredibly fragrant and delicious apple pie!

• Serve warm or fully cooled — equally amazing!
• Keeps in the fridge up to 4 days.

• Only oats + apples + stevia = minimal glycemic load.
• Net carbs per slice ≈ 10–12 g.
• Optional: add ½ tsp cinnamon — it further stabilizes blood sugar.
