Super airy, juicy pie with frozen black currants – completely sugar-free and wheat-free! Tender texture, bright berry flavor, and light sweetness from stevia.
Recipe for cooking and ingredients:
For the pie:
• ¾ cup frozen black currants (150 g / 5.29 oz)
• 1 cup whole grain rye flour (100 g / 3.5 oz)
• 2 tsp rye flour (for coating berries)
• 1 tsp baking powder
• 2 eggs
• ½ cup yogurt or sour cream (130 g / 4.6 oz)
• Pinch of salt
• 1 tbsp stevia
• 2 tbsp coconut oil (melted)
For decoration:
• ¼ cup almonds (30 g / 1 oz) – chop
Pan:
• 18 cm (7 in) diameter lined with parchment
• 170°C (340°F) — 40 minutes
For spiced green tea (optional pairing):
• 1 lemon slice
• 1 tsp dried ginger
• 5 whole cloves
• 1 tsp thyme
• 2 tbsp green tea
• 4 cups boiling water (1 liter / 33.8 fl oz) – steep 4–6 minutes
Instructions
1. Mix frozen black currants with 2 tsp rye flour to coat them (prevents sinking).
2. Sift rye flour + baking powder.
3. Whisk eggs + stevia + yogurt/sour cream + salt + melted coconut oil.
4. Combine dry and wet mixtures.
5. Gently fold in the coated berries.
6. Pour batter into a parchment-lined 18 cm pan.
7. Sprinkle chopped almonds on top.
8. Bake at 170°C for 40 minutes (toothpick test).
9. Let the pie cool completely.
Tea (optional):
• Add lemon + ginger + cloves + thyme + green tea to a teapot.
• Pour boiling water and steep 4–6 minutes.
Serve: This pie is moderately sweet, healthy, soft, and incredibly delicious! Enjoy your meal!
Serving & Storage
• Serve at room temperature or slightly chilled – the berries add extra juiciness.
• Keeps in the fridge up to 5 days.
Diabetic tips
• Frozen berries + rye flour + stevia = minimal blood sugar impact.
• Net carbs per slice ≈ 10–12 g.
• You can replace stevia with erythritol.
