🟢 材料:
排骨 – 400克
豆腐卜 – 100克
豆豉 – 10克(1湯匙)

蔥 – 2根
薑 – 1塊
紅辣椒 – 1隻
蠔油 – 1湯匙
生粉(澱粉) – 1湯匙
生抽 – 2茶匙
老抽 – 1茶匙
糖 – 1茶匙
鹽 – 1/4茶匙
胡椒粉 – 少許
🟢 做法:
1️⃣ 預備一個醃排骨的蒜頭豆豉調味料:蔥切碎,開分蔥白和蔥綠,蔥綠最後裝飾用。豆豉略為切碎,紅辣椒切成圈,蒜頭、薑切碎,碗中加入蔥白、豆豉、紅辣椒、蒜末、薑末,撥入熱油,加入蠔油1湯匙、鹽1/4茶匙、糖1茶匙、生抽2茶匙、老抽1茶匙、少許胡椒粉拌勻備用。
2️⃣ 排骨洗淨後吸乾水,加入醃排骨的蒜頭豆豉調味料拌勻,再加入1湯匙生粉拌勻,醃約30分鐘。
3️⃣ 豆腐卜用熱水反覆擠壓洗淨,擠出多餘水分,再對半切開備用。
4️⃣ 豆腐卜放碟底,均勻鋪上醃好的排骨,不要重疊。水滾下蒸,大火蒸10分鐘,撒上蔥綠出鍋。

Pork ribs – 400 g
Fried tofu puffs – 100 g
Fermented black beans – 10 g (1 tbsp)
Garlic – 3 cloves
Spring onions – 2 stalks
Ginger – 1 piece
Red chili – 1 piece
Oyster sauce – 1 tbsp
Cornstarch – 1 tbsp
Light soy sauce – 2 tsp
Dark soy sauce – 1 tsp
Sugar – 1 tsp
Salt – 1/4 tsp
White pepper – a pinch
🟢 Cooking Directions:
1️⃣ Prepare the garlic–black bean seasoning for marinating the ribs: finely chop the spring onions and separate the white and green parts, keeping the green part for garnish. Roughly chop the fermented black beans, slice the red chili into rings, and mince the garlic and ginger. In a bowl, combine the spring onion whites, black beans, red chili, garlic, and ginger, pour in some hot oil, then add 1 tbsp oyster sauce, 1/4 tsp salt, 1 tsp sugar, 2 tsp light soy sauce, 1 tsp dark soy sauce, and a pinch of white pepper. Mix well and set aside.
2️⃣ Wash the pork ribs and pat dry. Toss them with the prepared garlic–black bean seasoning, then add 1 tbsp cornstarch and mix well. Marinate for about 30 minutes.
3️⃣ Wash the tofu puffs with hot water, squeezing them repeatedly. Squeeze out the excess water, then cut them in half and set aside.
4️⃣ Place the tofu puffs on the bottom of a plate and evenly arrange the marinated ribs on top, making sure they don’t overlap. Bring water to a boil and place the plate in the steamer. Steam on high heat for 10 minutes, then sprinkle with the green parts of the spring onions before serving.

🇮🇩🟢 Bahan-bahan:
Iga babi – 400 g
Tahu goreng berbentuk puff – 100 g
Kacang hitam fermentasi – 10 g (1 sdm)
Bawang putih – 3 siung
Daun bawang – 2 batang
Jahe – 1 potong
Cabai merah – 1 buah
Saus tiram – 1 sdm
Tepung maizena – 1 sdm
Kecap asin – 2 sdt
Kecap manis pekat – 1 sdt
Gula – 1 sdt
Garam – 1/4 sdt
Lada putih – sejumput
🟢 Cara Memasak:
1️⃣ Siapkan bumbu bawang putih–kacang hitam untuk merendam iga: cincang halus daun bawang dan pisahkan bagian putih dan hijau, simpan bagian hijau untuk hiasan. Cincang kasar kacang hitam fermentasi, iris cabai merah menjadi cincin, dan cincang bawang putih serta jahe. Dalam mangkuk, gabungkan bagian putih daun bawang, kacang hitam, cabai merah, bawang putih, dan jahe, tuangkan sedikit minyak panas, lalu tambahkan 1 sdm saus tiram, 1/4 sdt garam, 1 sdt gula, 2 sdt kecap asin, 1 sdt kecap manis pekat, dan sejumput lada putih. Aduk rata dan sisihkan.
2️⃣ Cuci iga babi dan keringkan. Campur dengan bumbu bawang putih–kacang hitam yang sudah disiapkan, tambahkan 1 sdm tepung maizena, aduk rata. Rendam sekitar 30 menit.
3️⃣ Cuci tahu puff dengan air panas sambil ditekan berulang kali. Peras air berlebih, kemudian belah dua dan sisihkan.
4️⃣ Letakkan tahu puff di dasar piring, tata iga yang sudah direndam di atasnya secara merata, pastikan tidak saling menumpuk. Didihkan air dan letakkan piring di pengukus. Kukus dengan api besar selama 10 menit, kemudian taburi dengan bagian hijau daun bawang sebelum disajikan.

🟢 Paraan ng Pagluluto:
1️⃣ Ihanda ang garlic–black bean seasoning para sa pag-marinate ng ribs: hiwain ng pino ang spring onions at hiwalayin ang puti at berdeng bahagi, itabi ang berdeng bahagi para sa garnish. Gupitin ng medyo magaspang ang fermented black beans, hiwain ang pulang sili sa singsing, at durugin ang bawang at luya. Sa isang mangkok, pagsamahin ang puting bahagi ng spring onions, black beans, pulang sili, bawang, at luya, ibuhos ang mainit na mantika, pagkatapos ay idagdag ang 1 tbsp oyster sauce, 1/4 tsp asin, 1 tsp asukal, 2 tsp light soy sauce, 1 tsp dark soy sauce, at isang kurot ng white pepper. Haluin nang mabuti at itabi.
2️⃣ Hugasan ang baboy ribs at patuyuin. Ihalo sa inihandang garlic–black bean seasoning, idagdag ang 1 tbsp cornstarch at haluin nang mabuti. I-marinate ng mga 30 minuto.
3️⃣ Hugasan ang tofu puffs gamit ang mainit na tubig at pisilin ng paulit-ulit. Pisilin ang sobrang tubig, hatiin sa dalawa, at itabi.
4️⃣ Ilagay ang tofu puffs sa ilalim ng pinggan at pantay na ilagay ang marinated ribs sa ibabaw, siguraduhing hindi nag-o-overlap. Pakuluin ang tubig at ilagay ang pinggan sa steamer. I-steam sa mataas na init ng 10 minuto, pagkatapos ay budburan ng berdeng bahagi ng spring onions bago ihain.
