A tender apple-cottage cheese pie made with rye and oat flour, cinnamon, cranberries, and walnuts — zero sugar, zero wheat flour, zero glucose spikes! Fragrant, perfectly sweet, and truly festive. Recipe for cooking and ingredients:
For the pie:
• 1 medium apple (160 g / 5.6 oz) → peel and grate half (80 g), keep the other half with skin for tea
• 160 g (⅔ cup / 5.6 oz) soft cottage cheese
• 3 eggs
• Pinch of salt
• Sweetener to taste (stevia or erythritol)
• 140 g (1¼ cups / 4.9 oz) rye flour
• 30 g (¼ cup / 1 oz) oat flour
• ½ tsp cinnamon
• ⅔ tsp baking soda + 1 tbsp vinegar (to neutralize)
• 1 handful dried cranberries (soak 15 min)
• 1 handful walnuts (chopped)
For the chamomile tea:
• Remaining half apple (sliced)
• A few thin slices fresh ginger
• 1½ tbsp chamomile flowers
• 1 tsp dried mint
• Boiling water (steep 5 min)
Baking:
• 19 cm (7.5 in) round pan → greased + parchment on bottom
• 170°C (340°F) — 40–45 minutes
Instructions
1. Apple base:
o Peel and coarsely grate half the apple (80 g).
2. Wet mix:
o Combine grated apple + 160 g cottage cheese + 3 eggs + salt + sweetener.
3. Dry mix:
o Mix 140 g rye flour + 30 g oat flour + ½ tsp cinnamon.
o Extinguish ⅔ tsp baking soda with 1 tbsp vinegar and add to wet mix.
4. Batter:
o Fold dry mix into wet until combined.
o Pour into greased pan with parchment.
o Top with drained cranberries first, then chopped walnuts.
5. Bake:
o 170°C (340°F) — 40–45 minutes (toothpick clean).
6. Chamomile tea:
o Add remaining apple slices + ginger + chamomile + mint to teapot.
o Pour boiling water, steep 5 minutes.
7. Serve:
o Let the pie cool slightly. Enjoy!

• Serve warm or room temperature with the chamomile tea.
• Keeps in fridge up to 5 days.
