Hi everyone!
The most tender apple oat cake with cinnamon, cranberries, dried apricots, and walnuts – 100 % sugar-free and wheat-free! Juicy filling, beautifully arranged apple slices on top brushed with a lemon-stevia glaze.
Recipe for cooking and ingredients:
For the cake:
• 2 medium apples (1 finely chopped for batter, 1 sliced for topping)
• 2 eggs
• 3 tbsp milk
• 3 tbsp yogurt
• 1 tbsp stevia (or any 1:1 sugar substitute)
• 1 tsp vanilla powder/extract
• ⅔ tsp cinnamon
• 70 g (11 tbsp / ½ cup / 2.5 oz) rolled oats → grind into flour
• ½ tsp baking soda + 1 tsp 9 % vinegar (to neutralize)
• 40 g (¼ cup / 1.4 oz) dried cranberries (soak 15 min)
• 4 dried apricots (soak and chop)
• 30 g (⅕ cup / 1 oz) walnuts (chopped)
For the topping:
• Slices from the second apple
• Juice of ½ lemon
• 1 tsp stevia + ⅕ tsp cinnamon (mix and brush on apple slices)
Pan:
• 16×11 cm (6×4 in) → greased + parchment on the bottom
• 180°C (360°F) — 35 minutes
Instructions
1. Apples:
o Peel and core one apple, chop finely.
o Slice the second apple into thin wedges (for the top), drizzle with lemon juice.
2. Wet mix:
o Whisk eggs + milk + yogurt + stevia + vanilla + cinnamon.
3. Dry mix:
o Grind oats into flour.
o Extinguish baking soda with vinegar and add to the wet mix.
4. Batter:
o Combine wet and dry ingredients.
o Fold in chopped apple + drained and chopped dried fruits + walnuts.
5. Bake:
o Pour batter into the prepared pan.
o Arrange apple slices beautifully on top.
o Brush slices with the stevia-cinnamon mixture.
o Bake at 180°C (360°F) for 35 minutes (toothpick should come out clean).
6. Serve:
o Our fragrant cake is ready!

• Serve warm or completely cooled – both ways are amazing!
• Keeps in the fridge up to 5 days.
