A tender apple-lemon pie made with almond flour, psyllium, and chia — zero flour, zero sugar, zero glucose spikes! Bright lemon-with-zest aroma, crunchy nuts, and tart-sweet cranberries.
Recipe for cooking and ingredients:
For the pie:
• 1 apple (cut into chunks)
• ½ lemon (peeled, chopped)
• ½ lemon with peel (chopped)
• 2 eggs
• 1 tsp baking powder
• 1 tbsp stevia
• 1 tsp chia seeds
• 2 tbsp psyllium husk
• 4 tbsp (≈40 g) almonds → grind into flour
• 1 tbsp oats → grind into flour
• A pinch of vanilla powder
• 1 handful dried cranberries (soak 15 min)
• 1 handful almonds (roughly chopped for topping)
• Olive oil (to grease pan)
For the tea:
• 1 handful sea buckthorn (fresh/frozen)
• 1 cinnamon stick
• 2 tbsp large-leaf black tea
• Boiling water (steep 4–6 min)
Baking:
• 14 cm (5.5 in) round pan → greased + parchment on bottom
• 180°C (360°F) — 25 minutes
Instructions
1. Apple-lemon base:
o Chop 1 apple + whole lemon (half peeled, half with peel).
o Blend until smooth.
2. Batter:
o Add 2 eggs + 1 tsp baking powder + 1 tbsp stevia.
o Stir in 1 tsp chia + 2 tbsp psyllium.
o Add almond flour (from 4 tbsp almonds) + oat flour (from 1 tbsp oats) + vanilla.
o Mix and let rest 10 minutes to thicken.
3. Assembly:
o Grease 14 cm pan with olive oil, line bottom with parchment.
o Spread batter.
o Top with drained cranberries + chopped almonds.
4. Bake:
o 180°C (360°F) — 25 minutes (toothpick clean).
5. Sea-buckthorn tea:
o Add sea buckthorn + cinnamon stick + 2 tbsp black tea to teapot.
o Pour boiling water, steep 4–6 minutes.
6. Serve:
o Our diabetic-friendly pie is ready!
o Perfectly sweet, delicious, and fragrant!

• Keeps in fridge up to 5 days.

• Psyllium + chia = super fiber → slows carb absorption.
