Want a tender, aromatic, and super healthy Italian-style cookie made with just 3 ingredients and no sugar or flour? This is the one!
Crunchy on the outside, slightly soft inside, with a rich nutty flavor — the perfect everyday dessert or snack.
Recipe for cooking and ingredients:
• Walnuts — 2.5 cups (8.8 oz / 250 g)
• Eggs — 2
• Sugar substitute (stevia, erythritol or monk fruit) — 1 tablespoon
• Vanilla extract — a pinch
• Salt — a pinch
Instructions:
1. Lightly toast 2.5 cups walnuts (250 g) in a dry pan to enhance the flavor.
2. Grind the walnuts in a blender until they become fine crumbs (not powder).
3. Separate the egg whites from the yolks. Add 1 tablespoon of sugar substitute, a pinch of vanilla, and a pinch of salt to the whites. Whip until soft peaks form.
4. Gently combine the ground walnuts with the whipped egg whites.
5. Shape small cookies and place them on a baking sheet lined with parchment paper.
6. Brush each cookie with the beaten egg yolks.
7. Bake in a preheated oven at 340°F (170°C) for 15 minutes until golden.
8. Let them cool completely — they will become crispier as they cool.
Serving & Storage Enjoy with tea or coffee. Store in an airtight container for up to 7–10 days.
