虎皮尖椒炒茄子
材料:
茄瓜1條
虎皮尖椒6隻
辣椒仔5隻
車厘茄6粒
紅蘿蔔適量
素食蠔油
豆豉10粒
處理:
1. 所有材料,清水洗乾淨。
2. 茄瓜,打橫切一片片,放好在碟上。
3. 大火煲滾1鑊水,大火蒸茄瓜4分鐘。
4. 紅蘿蔔,去皮,洗乾淨,切幼條。
5. 虎皮尖椒,清水洗乾淨,去椗,去籽,打直切幼條。
6. 茄瓜已蒸好,放一邊。
烹調:
1. 大火在鑊內燒熱油半湯匙。
2. 放尖椒落鑊,炒至軟身。
3. 加入紅蘿蔔及茄瓜,炒勻。
4. 加入豆豉,炒勻。
5. 加入調味料:
a. 素食蠔油半湯匙
b. 生抽半湯匙
c. 糖半湯匙
炒勻。
5. 加入車厘茄,炒勻。
6. 加入辣椒仔,炒勻。
7. 完成,上碟,可享用。
Stir frying eggplant with green chili pepper
Ingredients:
Eggplant 1 log
Pan-seared green chili pepper 6 Nos.
Chili 5 Nos.
Cherry tomatoes 6 Nos.
Carrot appropriate amount
Vegetarian oyster sauce
Preserved beans 10 Nos.
Preparation:
1. All ingredients, rinse with tap water.
2. Eggplant, slice it horizontally. Put on plate.
3. Heat up a wok of water at high flame. Steam the eggplant for 4 minutes.
4. Carrot, get it peeled. Rinse with tap water. Thinly shred.
5. The peppers, rinse with tap water. Cut the anchors. Remove seeds. Thinly shred vertically.
6. Eggplant has been steamed well, put aside.
Steps:
1. Heat up 0.5 tbsp of oil at high flame in wok.
2. Put peppers in wok, fry well until they turn soft.
3. Add in carrot and eggplant, fry well.
4. Add in preserved beans, fry well.
5. Add seasoning:
a. Vegetarian oyster sauce 0.5 tbsp
b. Light soya sauce 0.5 tbsp
c. Sugar 0.5 tbsp
Fry well.
5. Add in cherry tomatoes, fry well.
6. Add in chili, fry well.
7. Complete. Put on plate. Serve.
