Hi everyone! Today we’re making a healthy, delicious cake!
An unbelievably tasty chocolate cake with a surprise filling of tender coconut “Raffaello” balls – 100 % flour-free and sugar-free! Dates provide natural sweetness, Greek yogurt and oats give an amazing texture, and it’s crowned with silky sugar-free dark chocolate glaze.
Recipe for cooking and ingredients:
For the cake batter:
• 150 g (1½ cups / 5.3 oz) rolled oats → grind into flour
• Pinch of salt
• 1 tsp vanilla powder/extract
• 20 g (⅙ cup / 0.7 oz) natural cocoa powder
• 2 tsp baking powder
• 120 g (about ⅔ cup) pitted dates (soak 15 min)
• 3 eggs
• 150 g (⅔ cup / 5.3 oz) Greek yogurt
• 3½ tbsp melted coconut oil
• 5–6 tbsp milk (any kind)
For the coconut “Raffaello” balls:
• 1 egg
• 50 g (¼ cup / 1.8 oz) Greek yogurt or soft cottage cheese
• 1 tbsp sugar-free maple syrup (or stevia to taste)
• ½ tsp vanilla
• 80 g (1 cup / 2.8 oz) desiccated coconut
For the chocolate glaze:
• 80 g sugar-free dark chocolate
• 4 tbsp milk
Pan:
• 16×11 cm (6×4 in) lined with parchment
• 180°C (360°F) — 40 minutes
Instructions
1. Dry mix:
o Combine oat flour + salt + vanilla + cocoa + baking powder.
2. Wet mix:
o Whisk 3 eggs.
o Finely chop or blend soaked dates and add to eggs.
o Stir in yogurt + melted coconut oil + milk.
3. Combine:
o Mix dry and wet ingredients until smooth.
4. Coconut balls:
o Mix egg + yogurt/cottage cheese + sugar-free maple syrup + vanilla + coconut.
o Form 6–8 small balls.
5. Assembly:
o Pour half the batter into the prepared pan.
o Press coconut balls into the center.
o Cover with remaining batter.
6. Bake:
o 180°C (360°F) — 40 minutes (toothpick should come out clean).
7. Glaze:
o Melt chocolate with milk in the microwave (defrost mode, ~3 min), stir until glossy.
o Pour over cooled cake.
8. Serve:
o Enjoy!
o Tastes better than any store-bought cake – and a hundred times healthier!
Serving & Storage
• Serve fully cooled so the glaze sets and cracks beautifully.
• Keeps in the fridge up to 5 days.
Diabetic tips
• Dates + oats + yogurt = slow-release carbs.
• Net carbs per slice ≈ 10–12 g.
• Replace maple syrup with extra stevia if desired.
