Today I’m showing you how to make the perfect almond cookies with just 3 ingredients! No sugar, no flour, and no gluten. These cookies are crunchy on the outside, soft inside, and have a wonderful nutty flavor. They’re ideal for everyday snacking or as a light dessert.
Recipe for cooking and ingredients:
• Almond flakes (or chopped almonds) — 1½ cups (4.6 oz / 130 g)
• Egg whites — 2
• Sugar-free dark chocolate — ½ cup (2.8 oz / 80 g)
• Salt — a pinch (optional)
Instructions:
1. Place 1½ cups almond flakes (130 g) into a bowl.
2. Separate the egg whites from the yolks. Add the egg whites to the almonds, add a pinch of salt (optional), and mix well so every almond flake is coated.
3. Line a baking sheet with parchment paper. Spoon small loose mounds onto the sheet — don’t press them too tightly to keep a soft texture inside.
4. Bake in a preheated oven at 340°F (170°C) for 15 minutes until beautifully golden.
5. Let the cookies cool completely.
6. Melt ½ cup sugar-free dark chocolate over a water bath.
7. Dip the bottom of each cookie in the melted chocolate and place them back on the parchment paper.
8. Put them in the refrigerator until the chocolate fully sets.
Bonus Aromatic Tea: Add 1 lemon slice, 2 tbsp of your favorite tea, 6 cardamom pods, and a few cloves to a teapot. Pour over boiling water and steep for 4–6 minutes. Perfect with these almond cookies!
