Today I’m making a super tasty high-protein bread with Greek yogurt — no white flour needed! Soft, delicious, and ready in just 5 minutes.
Ingredients (for a 8–9 inch pan):
For the bread:
• Eggs — 2
• Greek yogurt — 2 cups (14 oz / 400 g)
• Almond flour — 1½ cups (7 oz / 200 g)
• Salt — to taste
• Sesame seeds — for topping
For the quick sandwich (1 serving):
• Bread slices — 2
• Egg — 1
• Salt & black pepper
• Grated cheese
• Tomato slices
• Fresh herbs (dill + green onion)
Instructions:
1. Whisk 2 eggs, add 2 cups Greek yogurt (14 oz / 400 g) and salt. Mix well.
2. Add 1½ cups almond flour (7 oz / 200 g) and stir until smooth.
3. Pour into a parchment-lined and oiled pan, sprinkle with sesame seeds.
4. Bake at 360°F (180°C) for 45–55 minutes. Let cool completely.
Quick Hot Sandwich: Place 2 slices of bread in a pan. Pour beaten egg over them, top with cheese, herbs, and tomato slices. Cover and cook for 1 minute until the cheese melts.
This bread is perfect for sandwiches and keeps well in the fridge for up to 5 days!
