冷飯大變身
鰻魚炒飯
材料:
白飯(凍)2碗
鰻魚1件
雞蛋3隻
雜豆適量
芝麻適量
處理:
1. 雜豆,清水解凍。
2. 雞蛋,打在碗內。
3. 鰻魚,除去包裝袋,放碟上,室溫解凍。
烹調:
1. 芝麻,白鑊,最慢火,炒至聞到香味,放碟上。
2. 大火在鑊內燒熱油2湯匙,打勻雞蛋,煎至熟透,放在另一隻碟上。
3. 最慢火,放鰻魚在鑊內慢慢加熱,熄火,推向鑊邊。
4. 雜豆已解凍,清水沖洗乾淨。
5. 雞蛋,切粗條。
6. 鰻魚,放上碟。
7. 洗乾淨鑊。
8. 大火在鑊內燒熱油2湯匙。
9. 放冷飯落鑊,轉最慢火,壓鬆飯。
10. 加入調味料:
a. 鹽適量
b. 糖少許
c. 蠔油半湯匙
轉大火,加入雜豆,炒勻。
11. 加入蛋絲。
12. 放鰻魚在飯上,冚蓋,焗1分鐘。
13. 打開蓋,看看鰻魚是否已焗熱。
14. 取出鰻魚,放碟上。
15. 轉大火,炒飯至乾身。
16. 炒好,放上碟。
17. 灑上芝麻。
18. 可享用。
Eel fried rice
Ingredients:
Rice (cold) 2 bowls
Eel 1 No.
Eggs 3 Nos.
Mixed vegetables appropriate amount
Sesame appropriate amount
Preparation:
1. Mixed vegetables, defrost in tap water.
2. Eggs, break in a bowl.
3. Eel, remove plastics. Put on plate. Defrost in room temperature.
Steps:
1. The sesame, plain wok, the lowest flame, fry until you can feel the good smell. Put on plate.
2. Heat up 2 tbsp of oil at high flame in wok. Beat well the eggs. Fry it well. Put on another plate.
3. The lowest flame, put eel in wok. Heat it up. Turn off fire. Push it to the edge of wok.
4. Mixed vegetables has been defrosted, rinse thoroughly.
5. Eggs, thickly shred.
6. Eel, put on plate.
7. Rinse the wok.
8. Heat up 2 tbsp of oil at high flame in wok.
9. Put rice in wok. Turn to the lowest flame. Fry the rice well.
10. Add seasoning:
a. Salt appropriate amount
b. Sugar little
c. Oyster sauce 0.5 tbsp
Turn to high flame. Add in mixed vegetables, fry well.
11. Add in shredded eggs.
12. Put the eel on top of the rice. Cover it up. Leave it for a minute.
13. Open the cover, see if the eel is heated up.
14. Take out the eel. Put on plate.
15. Turn to high flame. Fry the rice until it is dry enough.
16. Finish. Put on plate.
17. Put sesame on top.
18. Serve.
